Carmine’s has been serving big, family-style Italian platters to New Yorkers for decades. Our Upper West Side location on Broadway is a neighborhood favorite for large parties, holidays, and nights out with friends and family. We’re looking for a Sous Chef who can keep our kitchen running smoothly and our plates coming out generous, consistent, and delicious.
The Role
As Sous Chef, you’ll work directly with the Executive Chef to lead daily kitchen operations. You’ll be a hands-on leader on the line, helping set the tone for quality, speed, and teamwork during high-volume service.
What You’ll Do
- Run the line during service and keep ticket times and plate quality on point
- Supervise, train, and motivate line cooks, prep cooks, and dishwashers
- Oversee prep, ordering, receiving, and inventory to control food costs and waste
- Uphold Carmine’s recipes, portioning, and presentation standards
- Maintain a clean, organized kitchen that meets all NYC Health Department and food safety requirements
- Help with scheduling and step in for the Executive Chef when needed
What We’re Looking For
- (2+) years of experience as a Sous Chef or Lead Line Cook in a high-volume restaurant
- Strong knowledge of Italian-American cooking is a big plus
- Leadership skills, with the ability to stay calm and keep the team moving in a busy kitchen
- Solid understanding of food cost, ordering, and inventory
- NYC Food Protection Certificate (or willingness to obtain one)
- Flexible availability, including nights, weekends, and holidays
